6-8 tbsp ice water

¾ cup granulated sugar

¼ cup light brown sugar

2 tbsp all-purpose flour

1 tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp ground allspice

1 tbsp lemon juice

Instructions

Prepare the Crust:

In a large bowl, combine the flour, sugar, and salt.

Add the chilled butter and use a pastry cutter or your fingers to cut it into the flour until the mixture resembles coarse crumbs.

Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork the dough.

Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling:

In a large bowl, toss the sliced apples with the granulated sugar, brown sugar, flour, cinnamon, nutmeg, allspice, and lemon juice until well coated.

Let the mixture sit for about 15 minutes to allow the flavors to meld and the juices to release.

 Assemble the Pie:

Preheat your oven to 425°F (220°C).

On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie dish. Transfer the dough to the dish and trim the edges.
